Cottage Cheese Egg Muffins

Cottage Cheese Egg Muffins

Ingredients

  • 1 Cup Bell Peppers, diced
  • 1/2 Cup Lower Sodium Turkey Deli Meat, diced
  • 1 Cup Spinach, finely chopped
  • 5 Eggs
  • 3/4 Cup Kemps Cottage Cheese
  • 1/4 Cup Cheese
  • 1 tsp Paprika
  • 1/2 tsp Cayenne Pepper

Instructions

  1. Combine eggs, cottage cheese and cheese in large bowl. Add remaining ingredients; mix well.
  2. Spoon into well-greased muffin tin.
  3. Bake at 375ºF for 30 minutes or until eggs are set.
