Fall is just around the corner, so when the weather gets colder meals get cozier! One of my favorite cozy night-in soups is my own take on Olive Garden’s Zuppa Toscana! Loaded with garlic and potatoes, you can’t go wrong with this delicious recipe.

 

Olive Garden Copycat Zuppa Toscana
 
Ingredients
  • Olive Oil
  • 1 Onion, chopped
  • 4-6 Cloves Garlic, minced
  • 1 Lb. Italian Sausage
  • 32 Oz. Chicken Broth
  • 4-6 Red Potatoes, sliced
  • 1/2 Pint Whipping Cream
  • 2-3 Leaves Kale, chopped
Instructions
  1. Caramelize onions with olive oil in a large stock pot
  2. Stir in garlic
  3. Add sausage and cook until brown
  4. Add chicken stock and potatoes
  5. Cover, bring to a boil
  6. Stir in cream
  7. Stir in kale
  8. Salt & pepper to taste
 

You can also mold the recipe to your dietary needs. Can’t have dairy? Leave out the cream and replace it with unsweetened almond milk. Can’t have pork? Just replace the pork with Italian style turkey. Vegetarian/Vegan? Replace the chicken stock with vegetable stock and leave out the sausage, just be sure to add some crushed pepper flakes to give it a little kick 😉

The nice thing about making this soup yourself is you can control the ingredients, and tailor it to your tastes. This quick and easy recipe is an amazing starter to a perfect night IN!
