Beefy Sweet Potato and Black Bean Chili

Yield: 8 servings

Ingredients

  • 1 lb. Laura's 92% Lean Ground Beef
  • 1/2 lb. Large Sweet Potato, peeled and cut into 1/2 inch dice
  • 1 Onion, diced
  • 1 tsp Chipotle Powder
  • 1 Tbsp. Paprika
  • 1 tsp Cumin
  • 4 Cloves Garlic, minced
  • 2 (14.5 oz) Cans Black Beans, with liquid
  • 1 (14.5 oz) Can Diced Tomatoes, with liquid
  • 1 Cup Water
  • 1 Medium Avocado, sliced
  • 1/2 Cup Fresh Cilantro Leaves, chopped
  • 2 Oz. queso fresco, crumbled
  • 2 Tbsp. Olive Oil
  • Salt and Pepper, to taste

Instructions

  1. Place a large stock pot over medium-high heat. Add the vegetable oil followed by the Laura's 92% Lean ground beef, onion, salt and pepper. Cook until the ground beef is browned, about 5 minutes.
  2. Add the chipotle powder, paprika, cumin and garlic, and cook for 3 minutes more.
  3. Add the black beans with juices, diced sweet potato, tomatoes with juices, tomato sauce and water. Season with salt and pepper, again, to taste. Bring to a boil, then reduce to a simmer. Cook until the sweet potatoes become tender, about 20 minutes.
  4. Ladle into bowls and top with an even amount of avocado slices, cilantro leaves and queso fresco.

Rainbow Chili

Ingredients

  • 1/2 Cup Bulgur, dry
  • 1 Cup Water
  • 2 Tbsp. Canola Oil
  • 2 Medium Onion, chopped
  • 1 tsp Garlic Powder
  • 2 Carrots, sliced
  • 2 tsp Ground Cumin
  • 2 tsp Chili Powder
  • 2 Green Peppers, chopped
  • 1 Can (26-28 Oz.) Diced Tomatoes
  • 2 Cups Frozen Corn, thawed
  • 2 Cans (15 Oz.) Kidney or Black Beans, drained and rinsed

Instructions

  1. In small pot pour in bulgur, water, and juice from the canned tomatoes. Heat over medium heat for 5 minutes. Then, reduce the heat to medium-low and cover with lid. Let simmer until bulgur is tender, about 15 minutes.
  2. In a second pot, add garlic, carrots, cumin and chili powder. Heat over medium heat and cook until onions are soft. Add green peppers and cook for an additional 2-3 minutes.
  3. Add in tomatoes, corn, and beans to the carrot and onion mixture. Heat thoroughly over medium-low heat.
  4. Lastly, add the cooked bulgur and stir all ingredients together. Let simmer over medium-low heat for 5 minutes.

White Chicken Chili

Ingredients
  • 32 oz low sodium chicken broth
  • 16 oz boneless, chicken breasts
  • 15 oz can cannellini beans
  • 15 oz can no salt added black beans
  • 16 Oz. salsa verde
  • 2 tsp ground cumin
  • 2-3 Tbsp corn starch
Instructions
  1. Combine all ingredients in slow cooker.
  2. Cook on high for 4 hours, or low for 6 hours, until chicken is cooked through. Shred chicken with a fork and return to slow cooker. Mix well.
  3. Serve with desired toppings.

Ingredients
  • 2 tsp. Oil
  • 2 Onions, chopped
  • 3 Cloves Garlic, minced
  • 1 Lb. Lean Ground Beef
  • 3/4 Lb. Beef Sirloin, cubed
  • 14 Oz. Can Diced Tomatoes
  • 1 Can Dark Beer
  • 1 Cup Strong Coffee
  • 12 Oz. Can Tomato Paste
  • 1 Can Beef Broth
  • 1/2 Cup Brown Sugar
  • 3 1/2 Tbsp Chili Sauce
  • 1 Tbsp Cumin
  • 1 Tbsp Cocoa
  • 1 tsp. Oregano
  • 1 tsp. Cayenne
  • 1 tsp. Coriander
  • 1 tsp. Salt
  • 4 Cans (15 Oz.) Kidney Beans
  • 4 Chili Peppers, chopped
Instructions
  1. Heat oil.
  2. Cook onions, garlic and meat until browned.
  3. Add tomatoes, beer, coffee, tomato paste and beef broth.
  4. Add brown sugar, spices, 2 cans of kidney beans and peppers; mix well.
  5. Reduce heat and simmer for 1 1/2 hours.
  6. Add remaining 2 cans of kidney beans and simmer for another 30 minutes.
