Caribbean Jerk Sauce Marinade

Ingredients: 

  • 6 green onions, chopped
  • 1 jalapeno, seeded
  • 3 cloves garlic
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon thyme
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon cayenne pepper
  • 1/2 cup extra virgin olive oil

Directions: 

  1. Combine all ingredients in blender until smooth.
  2. For marinade, place 4 chicken breasts in baking dish. Pour contents of blender over chicken and cover. Place in refrigerator for 1 hour before grilling.

I love summers up here in the Midwest because of the weather and of course the food! Today we are featuring a couple recipes for The Blend, which is perfect timing for grilling over the 4th of July!

What is The Blend you ask!? Well, it’s a blend of ground meat (or poultry) + mushrooms! Yes, mushrooms! It’s such a great way to sneak in some great nutrition without sacrificing great flavor. I look forward to grilling up some good ol’ burgers using The Blend all summer long! 

You can’t go wrong with the Classic California Burger, but I’d love it if you tried out the Fiesta Burger, too! You won’t be disappointed! This is a perfect fit for upcoming meals with family and friends over the 4th of July.

4th Of July

It’s so close to the 4th of July and I am so excited! This has got to be my most favorite holiday! I love having my family and friends get together at the lake to play games, go boating, swimming and enjoying all day in the hot sun!! The best part is at the end of the night getting on the pontoon and heading down to the bay for a show of the most beautiful fireworks under the stars. You couldn’t ask for a better summer. This year I am way ahead of the game and have my menu planned for the 4th of July and I just have to share it with you.

This year I want to make it easy for me since I am the head cook at our event! It’s going to be Four Brothers Burgers all the way. They have so many flavors including Bacon and Cheddar Burger, Bleu Cheese Burger, Buffalo Bleu, Mushroom and Swiss and Hot Pepper Burgers and they are all so yummy. Just pick up your favorite flavor at anyone of our Meat Departments.

Every good get together, especially if it’s a hot day, needs some refreshing fruit. This recipe is easy to prep ahead of time if needed! 

Mixed Berry Salad

 

While the burgers are on the grill and the salad is in the fridge, there’s no better way to relax and enjoy the sunshine than with a nice tropical drink. Here’s a new favorite of mine! It’s called Island Living, and trust me, once you have a taste of this, you’ll feel like you’re on an island!

Now you can’t forget dessert on the 4th of the July and I love to serve something that ties in with the holiday. We have a new Cream Cake flavor that has just arrived in our Bakery Departments and it’s so decedent and scrumptious you just have to check it out. It will be perfect for your holiday table. It has beautiful fresh blueberries sprinkled all over the top and drizzled with icing. On the inside it has those large tart cranberries that put this dessert over the top. 

This is a fun celebration and it’s time to enjoy these summer months so make sure you are serving something easy so you can have fun in the sun! Have a safe and Happy 4th of July!!!

The Blend Classic California Burger

The Blend Classic California Burger

Yield: 4

Ingredients

  • 1 lb of lean ground beef 93/7
  • 8 oz of mushrooms (white button and/or crimini mushrooms)
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp ground cayenne pepper
  • 1 Tbsp worchestire sauce
  • Salt and pepper, to taste
  • 1 avocado, sliced
  • Sliced cheese
  • Lettuce
  • Tomato slices
  • Onion slices
  • mayo
  • Whole wheat buns

Instructions

  1. Thoroughly wash the mushrooms. Pat dry and place in a food processor. Plus slowly to make the mushrooms similar in texture to cooked ground beef.
  2. In a medium skillet, sauté onion with 1 Tbsp. of oil over medium heat for 3-4 minutes. Remove from pan and set aside to let cool.
  3. In a large bowl, combine the lean ground beef and cooled mushrooms. Add in paprika, garlic powder, onion powder, cayenne pepper, as well as a dash salt & pepper.
  4. Once well blended, divide the mixture into 4 patties.
  5. Grill until the center has reached proper internal temperature of 160 degrees Fahrenheit. Just before removing from the grill, add on cheese and let melt.
  6. Place each patty onto a whole wheat bun and add on the toppings: mayo, lettuce, tomato, onions and avocado.

  • ½ of Mrs. Dash Taco seasoning packet
  • 1 avocado, sliced
  • Sliced cheese
  • Corn and black bean salsa
  • Lettuce
  • Tomato slices
  • Onion slices
  • Whole wheat buns

Instructions

  1. Thoroughly wash the mushrooms. Pat dry and place in a food processor. Plus slowly to make the mushrooms similar in texture to cooked ground beef.
  2. In a medium skillet, sauté onion with 1 Tbsp. of oil over medium heat for 3-4 minutes. Remove from pan and set aside to let cool.

Father’s Day

Happy Father’s Day everyone! It’s hard to believe Father’s Day is right around the corner and I need to start planning the menu and I know that so many dad’s just love a great steak on the grill along with an outdoor party that includes the entire family.

I have some exciting news!  We now have 1881 Certified Hereford Steaks.  These steaks are so delicious and they are aged to perfection, great marbling with great quality and consistency. The best way to grill them is to sear them on both sides on high heat. Then slide the steaks to a part of the grill that is not so hot or over indirect heat and finish cooking them safely. Always make sure to watch your steaks to prevent flair-ups. Although the internal temp will vary depending on how you like your steak, I heat mine to an internal temperature of 145 degrees.  

Let’s not forget to serve some bread with your steak and we have a new bread in our Bakery Departments called Firecracker Bread and it is perfect with steak and salad. It has a hint of Siracha flavoring in it and it’s fantastic!!! We also have a new item that pairs with this bread perfectly and it is Garlic Expressions and it can be used several ways. It’s great for marinades, salad and dipping bread in the oil. 

Speaking of salads let’s not forget a great fresh salad with these two items to tie it all together. Here is a recipe of one of my favorites: 

Raspberry Poppy Seed Salad

Ingredients: 

  • 9 oz. Romaine
  • 2 cups Raspberries
  • 2 Kiwi, sliced and cut in half
  • ½ cup thinly sliced onions
  • ½ cup Poppy Seed Dressing

Directions:  

  1. Carefully mix romaine, raspberries, kiwis and onions together in large bowl.
  2.  Pour dressing over the top and lightly toss.

Now Father’s Day is not complete until you serve dessert, right? Not only does Dad love it but so does the entire family. It’s called Sweet Me Creamery Ice Cream and it is out of this world with flavor! Speaking of all those flavors… there is so many to choose from that the hardest part is making up your mind!

Grilled Pineapple

Grilled Pineapple 

Ingredients:

  • Fresh Pineapple, cored and sliced into rings
  • Honey

Directions: 

  1. Preheat grill to medium heat.
  2. Slice pineapple into 8 rings. Place rings onto the grill grates and grill until slightly charred on both sides, about 2 to 3 minutes per side.
  3. Drizzle with a tablespoon of honey and serve immediately.

Pairing wine with food should be a fun endeavor especially when it comes to summer grilling. Balancing flavors is a good starting place where you don’t want one element to overpower another like a Cabernet might do to shrimp skewers or steak might do to Pinot Grigio. Texture can be important too and is demonstrated well by a wine with tannins cutting through a fattier piece of meat. As I once heard, another way to think of pairing food & wine is to treat wine like another condiment. Try to create a similar effect to squeezed lemon on seafood or pesto on a steak or salad. Finally if all else fails pick a sparkling wine like Prosecco to pair with grilled food as those bubbles can pair with nearly anything.
