This recipe has been in my family for at least two generations. When I was a teen, a friend came for supper. She loved this recipe so my mom made it. We were all eating and talking. When she was done she lifted her plate up to her face and started licking it. We all stopped and stared. I still do not let her forget that!  ~ Sheri L.

Blueberry, Avocado & Banana Smoothie Bowl

Serves: 1-2
Ingredients
  • 1 Cup Blueberry Low-Fat Lifeway Kefir
  • 1 Cup Frozen Blueberries
  • 2 Tbsp. Avocado
  • 1 Banana, frozen
  • Additional Toppings
  • Granola
  • Blueberries
  • Banana Slices
  • Fresh Mint
Instructions
  1. Blend all ingredients in blender or food processor until smooth.
  2. Pour into 1-2 Bowls. Top with desired toppings. 
Notes
Try adding 1 Tbsp Ground Flaxseed or 1 Tbsp Chia Seeds for added nutrition!

 

 

Hamburger & Noodle Soup

Hamburger & Noodle Soup

 
Ingredients
  • 1 Lb. Lean Ground Beef
  • 1-2 Celery Stalks, chopped
  • 1 Package Dry Onion Soup Mix
  • 1 Can Petite Diced Tomatoes
  • 6 Cups Water
  • Salt and Pepper, to taste
  • 2 Cups Frozen Mixed Vegetables, thawed
  • 2-3 Cups Egg Noodles
Instructions
  1. In large skillet, brown hamburger until thoroughly cooked; drain.
  2. In large pot, combine all ingredients except vegetables and noodles.
  3. Let simmer for 1 hour or until celery becomes tender, stirring occasionally.
  4. Add vegetables and noodles, bring to a boil, then reduce to a simmer.
  5. Cook until noodles are done, about 20 minutes. Serve hot.
