Cottage Cheese Egg Muffins
Ingredients
- 1 C. Bell Peppers, diced
- 1/2 C. Lower Sodium Turkey Deli Meat, diced
- 1 C. Spinach, finely chopped
- 5 Eggs
- 3/4 C. Low Fat Cottage Cheese
- 1/4 C. Cheese
- 1 tsp. Paprika
- 1/2 tsp. Cayenne Pepper
Instructions
- Combine eggs, cottage cheese and cheese in large bowl. Add remaining ingredients; mix well.
- Spoon into well-greased muffin tin.
- Bake at 375ºF for 30 minutes or until eggs are set.
