Classic Potato Salad

Ingredients
- 3 Lbs. Yukon Gold Potatoes
- 2 Tbsp. Chives, finely chopped
- 2 Tbsp. Parsley, finely chopped
- 15 Oz. Can Peas, drained
- 4 Hard Boiled Eggs, roughly chopped
- 5-6 Radishes, thinly sliced
Dressing
- 1 C. Mayonnaise
- 2 Tbsp. Olive Oil
- 1 1/2 Tbsp. Ground Mustard
- 1 Tbsp. Vinegar
- 1/2 tsp. Salt
- Fresh Ground Pepper, to taste
Instructions
- Bring a large pot of salted water to a boil.
- Scrub and clean potatoes. Cut potatoes into 1.5-2 inch pieces.
- Add potatoes to boiling water and cook until fork tender, about 10-15 min. Drain and run under cold water.
- When potatoes are cooled, add potatoes, chives, parsley, peas, eggs and radishes all together in a large bowl.
- In a small bowl whisk all dressing ingredients until smooth and pour into large bowl. Gently toss until potatoes are completely coated.
- Garnish with extra chives, parsley and radishes, if desired.
