Melon and Mint Sorbet

Ingredients
- 1/2 C. Granulated Sugar
- 1/2 C. Light Corn Syrup
- 3 Tbsp. Water
- 1/2 C. Mint Leaves, plus more for garnish
- 2 Tbsp. Lime Juice
- 1/4 tsp. Salt
- 6 C. Cantagold Cantaloupe, MelloSweet Honeydew or Watermelon, cubed
Instructions
- Combine sugar, corn syrup and water in a small saucepan over medium heat. Stir until sugar is completely dissolved. Bring to a simmer and remove from heat. Add mint leaves, lime juice and salt.
- In a blender combine sugar syrup mixture and melon. Blend until smooth. Cover and chill mixture at least 4 hours.
- Churn chilled mixture in an ice cream machine according to manufacturer’s directions.
- Transfer sorbet to freezer, cover and chill until ready to serve. Scoop and garnish with fresh mint leaves.
