Cherry Jam
Ingredients
- 2 1/2 Lbs. Fresh Cherries, pitted
- 1 3/4 Oz. Powdered Fruit Pectin
- 1/2 tsp. Butter
- 4 1/2 C. Sugar
- 6 Half Pint Canning Jars, with lids and rings
Instructions
- Using a food processor, process cherries in batches until finely chopped.
- Add cherries into Dutch oven along with pectin and butter. Bring mixture to a full rolling boil over high heat, stirring constantly.
- Once boiling, stir in sugar and return mixture to a full rolling boil. Boil and stir 1 minute.
- Remove from heat and skim off foam. Ladle hot mixture into 6 sterilized half-pint jars, leaving a quarter inch of headspace. Make sure there are no air bubbles.
- Wipe rims. Center lids on jars and screw on bands until fingertip tight.
- Place jars into canning pot with simmering water. They should be completely covered with water. Bring to a boil and process for 5 minutes.
- Remove jars and cool. Ensure jars are properly sealed before storing.
