Marry Me Chicken Thighs with Orzo
Ingredients
- 1/2 (16 Oz.) Package Orzo Pasta
- 2 Tbsp. Olive Oil
- 4 Four Brothers® Premium Air Chilled Bone-In, Skin-On Chicken Thighs
- 1/2 tsp. Fresh Ground Black Pepper
- 1/2 tsp. Paprika
- 4 Garlic Cloves, minced
- 1/2 C. Sun-Dried Tomatoes in Oil, drained and coarsely chopped
- 1/2 (8 Oz.) Package Neufchâtel Cheese, softened
- 1 C. Less-Sodium Chicken Broth
- 2 tsp. Italian Seasoning
- 1/2 tsp. Crushed Red Pepper Flakes
- Grated Parmesan Cheese and/or Chopped Fresh Basil, for garnish (optional)
Instructions
- Prepare orzo as label directs; drain and return to saucepot. Stir in 1 tablespoon oil; cover to keep warm. Makes about 3 cups.
- Sprinkle both sides of chicken with black pepper and paprika. In large skillet, heat remaining 1 tablespoon oil over medium heat. Add chicken; cook 10 minutes or until chicken is browned, turning once. Transfer chicken to plate. Add garlic and sun-dried tomatoes to skillet; cook 1 minute or until fragrant, stirring frequently. Stir in Neufchâtel cheese, broth, Italian seasoning and crushed red pepper. Add chicken to skillet; cook 9 minutes or until cheese is melted and internal temperature of chicken reaches 165°, stirring frequently. Makes about 1 cup sauce.
- Serve chicken mixture over orzo sprinkled with Parmesan cheese and/or basil, if desired.
