Mango Cobb Salad

Ingredients
- 2 Ripe Mangos
- 1 Avocado, cut into strips
- 1/2 cup Cherry Tomatoes, halved
- 1/4 cup Pickled Red Onions
- 3 cup Lettuce, roughly chopped
- 1/2 cup Feta, crumbled
- 4 Slices Lower Sodium Bacon, cooked & crumbled
- 2 Soft Boiled Eggs
Salad Dressing
- 1 tbsp Honey Mustard
- 1 tsp Honey
- 1 Garlic Clove, minced
- Sea Salt (to taste)
- 1 tbsp Red Wine Vinegar
- 2 tbsp Orange Juice
- 2 tbsp Olive Oil
- Fresh Cracked Pepper (to taste)
Instructions
- Add lettuce to a large bowl and top with mango, avocado, feta, tomato, bacon and pickled red onion. Set aside.
- Whisk together remaining ingredients and pour over salad.
- Season with salt and pepper to taste.
