Blueberry Cottage Cheese Muffins
Ingredients
- 1 Banana
- 2 C. Rolled Oats
- 1/2 C. Low Fat Cottage Cheese
- 1/2 C. Skim Milk
- 2 Eggs
- 2 Tbsp. Honey
- 1 tsp. Vanilla Extract
- 1 tsp. Baking Powder
- 1/2 tsp. Baking Soda
- 1 tsp. Cinnamon
- 3/4 C. Blueberries
- 1 Tbsp. All Purpose Flour
Instructions
- Preheat oven to 350F.
- Line muffin tin with 12 muffin liners.
- Add all ingredients except blueberries and flour to blender and blend until smooth. Alternatively, combine all ingredients except blueberries and flour in a large bowl and use an immersion blender to blend until smooth.
- In a small bowl, combine blueberries and flour. Lightly toss or stir until blueberries are evenly coated in flour.
- Fold blueberries into batter.
- Divide batter among muffin liners.
- Bake for 20-25 minutes or until toothpick inserted near center comes out clean.
