Cantaloupe Caprese Skewers
Ingredients
- 3 Tbsp. Olive Oil
- 2 Tbsp. Fresh Lemon Juice
- Salt & Pepper, to taste
- 1 Cantaloupe, cut in half and seeded
- 8 Oz. Fresh Mozzarella Balls
- 1 Bunch Fresh Basil Leaves
- 1 Bunch Fresh Mint Leaves
- 2 Oz. Prosciutto
- Skewers
Instructions
- Whisk together olive oil, lemon juice, salt and pepper; set aside.
- Using a melon baller, create as many melon balls as you can, set aside.
- Begin assembling skewers by placing on a melon ball followed by a mozzarella ball, fresh basil leaf, melon ball, slice of prosciutto, melon ball, mint leaf, mozzarella ball, and then ending with another melon ball. Mix up the order if desired for more variety!
- Once skewers are assembled, drizzle dressing over them and sprinkle lightly with salt. Serve immediately.
