Dill Pickle Potato Salad
Ingredients
Salad
- 1.5 Lbs. Farmer's Promise Red Potatoes, cubed
- 1 Bunch Green Onions, thinly sliced
- 2-3 Dill Pickles, chopped
- 2 Tbsp. Fresh Minced Dill
- 3 Hard-Boiled Eggs, sliced
- Fresh Dill, optional for garnish
- Chopped Dill Pickles, optional for garnish
Dressing
- 1/2 C. Olive Oil Mayonnaise
- 1 tbsp. Buttermilk
- 1 tbsp. Pickle Juice
- Salt & Pepper, to taste
Instructions
- In a small bowl, whisk dressing ingredients together & set aside.
- Place potatoes in a medium pot filled with cold, salted water. Bring to a boil, then lower heat & boil gently, just until potatoes are fork-tender, about 8-12 minutes. Drain & rinse in cold water to stop cooking.
- Place potatoes in a large bowl & toss with a generous amount of the dressing (save some for later use). Add green onions, chopped pickles & dill; toss gently. Top with sliced eggs; Refrigerate for at least an hour or two to let the flavors mingle. Add more dressing, if necessary. Garnish with extra dill & chopped pickles, if desired.
