Easy Egg Casserole
Ingredients
- 1 C. Lean Ham, cubed
- 1 C. Frozen Seasoned Potatoes (with onions and peppers)
- 3/4 C. Frozen Spinach, chopped
- 1/2 C. Low-Fat Cheddar or Swiss Cheese, shredded
- 6 Eggs
- 3/4 C. Skim Milk
Pair each serving with:
- 8 Oz. Glass of Milk
Instructions
- Preheat oven to 375°F. Lightly coat an 8×8-inch casserole dish with non-stick spray.
- Arrange the ham, potatoes, spinach, and cheese in the bottom of the casserole dish. Beat the eggs and 3/4 cup milk together in a large bowl and pour over the ingredients in the casserole dish.
- Bake 25 to 30 minutes or until lightly browned and puffed. Serve immediately with an 8-ounce glass of skim milk.
