Fresh Melon & Ricotta Salad
Ingredients
- 2 CantaGold Melons, cut in half and seeded
- 1 English Cucumber, thinly sliced
- 2 Bunches Radishes, thinly sliced
- 1/2 Shallot, finely diced
- 2 Tbsp. Finely Chopped Basil
- 2 Tbsp. Finely Chopped Mint
- 4 Tbsp. Apple Cider Vinegar or Lemon Juice
- 3 Tbsp. Light Olive Oil
- 1 Tbsp Pure Maple Syrup
- 1 1/2 C. Whole Milk Ricotta
- Salt, to taste
Instructions
- Using a melon baller, create as many melon balls as you can, placing in large bowl. Add thinly sliced cucumber and radishes.
- In a small bowl, whisk together the shallot, basil, mint, vinegar, olive oil and syrup. Drizzle over melon, cucumber and radishes; stir to evenly coat.
- Spoon ricotta onto a medium platter or plate. Salt lightly and top with cantaloupe mixture. Enjoy!
