Ginger Orange Chicken
Ingredients
- 2 Tbsp. Extra Virgin Olive Oil
- 1 1/2 Lbs. Boneless, Skinless Chicken Breasts, cut into bite-size pieces
- 3 Chilean Mandarins, peeled and cut into small, bite-size pieces
- 3 Tbsp. Low Sodium Soy Sauce
- 2 Tbsp. Honey
- 2 tsp. Sriracha Sauce (or less if sensitive to spice)
- 1/2 tsp. Ground Ginger
For Serving:
- 3 C. Brown Rice, cooked OR
- 1 Head Of Lettuce (red, butter or romaine)
Instructions
- Preheat oven to 375ºF.
- On a sheet pan, toss the chicken with the olive oil using tongs. Cook for 15-20 minutes, until the internal temperature reads 165ºF with a meat thermometer. Have an adult help with this step as needed.
- Meanwhile, combine the remaining ingredients in a small saucepan. Sir continuously over medium heat for about 3 minutes. Again, have an adult help with this step as needed.
- Being careful of hot pans, combine the chicken and sauce in a large bowl. Use a clean tongs to toss the chicken together with the sauce.
- Serve warm over rice or a lettuce leaf. Enjoy!
