Greek Feta & Sun-Dried Tomato-Stuffed Chicken
Ingredients
- 4 Four Brothers® Premium Air Chilled Boneless Skinless Chicken Breast Fillets
- 1 C. Greek-Style Vinaigrette
- Nonstick Cooking Spray
- 1/2 (8 Oz.) Block Feta Cheese, crumbled
- 1/4 (8 Oz.) Package Cream Cheese, softened
- 1 1/2 Tbsp. Sun-Dried Tomato Pesto
- 1/2 tsp. Kosher Salt
- 1 tsp. Ground Black Pepper
- 12 Toothpicks
Instructions
- Place chicken in large zip-top plastic bag; pour vinaigrette over chicken. Seal bag, pressing out excess air; refrigerate at least 1 or up to 2 hours.
- Preheat oven to 350°; spray 13 x 9-inch baking dish with cooking spray. In medium bowl, stir feta cheese, cream cheese and pesto. Makes about 1 cup.
- Remove chicken from marinade; discard marinade. With sharp knife, cut each chicken breast horizontally in half, but do not cut all the way through, leaving about 1/4-inch uncut; open chicken breasts and lay flat. Sprinkle both sides of chicken with salt and pepper. Leaving 1/2-inch border, spread cheese mixture over bottom halves of chicken; fold to enclose filling, secure with toothpicks and place in prepared dish.
- Bake chicken 40 minutes or until internal temperature of chicken and filling reaches 165°. Makes 4 stuffed chicken breasts.
