Grilled Cajun-Style Mushroom Kabobs
Ingredients
- 16 Oz. Highline White Mushrooms, stems removed
- 1 Large Green Bell Pepper, cut into 2 inch pieces
- 1 Large Yellow Bell Pepper, cut into 2 inch pieces
- 1 Pint Grape Tomatoes
- 1 Small Zucchini, cut into 1/2 inch rounds
- 1/4 C. Extra Virgin Olive Oil, plus more for grates
- 1 Tbsp. Cajun Seasoning
- 2 tsp. Hot Sauce
- Long Grain Rice, optional for serving
Instructions
- Place mushrooms, peppers, onions, tomatoes and zucchini in large resealable plastic bag. Add oil, Cajun seasoning and hot sauce. Massage mixture into vegetables to cover completely.
- Preheat grill to medium heat and brush grates with oil. Remove vegetables from marinade. Set marinade aside for brushing kabobs while grilling.
- Thread 8 skewers with mushrooms, peppers, onions and tomatoes, alternating ingredients evenly.
- Grill kabobs, flipping occasionally and brushing with reserved lemon mixture, until vegetables are tender, about 8-10 minutes. Serve with rice and enjoy.
