Grilled Lemon Pepper Pork Chops

Ingredients
- 4 Pork Rib Chops
- 1 Tbsp. Four Brothers Lemon Pepper Seasoning
- 8 Oz. Mushrooms
- 2 Lbs. Red Potatoes, cubed
- 3 Tbsp. Extra Virgin Olive Oil, divided
- Salt and Pepper, to taste
Instructions
- Preheat the grill to medium-high heat.
- Pat the pork rib chops dry, drizzle with 1 Tbsp. olive oil, and season.
- In a bowl, toss the potatoes with 1 Tbsp. olive oil, salt, and pepper.
- Transfer the potatoes to a grill pan and cook about 15 minutes, stirring occasionally.
- In a the same bowl, toss the mushrooms with the remaining 1 Tbsp. olive oil, salt, and pepper.
- Transfer the mushrooms to the grill pan with the potatoes. Cook another 10 minutes, until the vegetables are tender.
- Meanwhile, cook the pork chops. Place them on the grill grates and allow to cook for 3 minutes before flipping. Cook the other side an additional 3 minutes, or until the internal temperature reaches 145F.
- Allow the pork chops to rest 5 minutes before serving.
