Grilled Portabella Burgers with Garlic Mayo
Ingredients
Burgers:
- 6 Oz. Highline Mushrooms Portabella Grill Caps, stems and gills removed
- 1/3 C. Olive Oil Mayonnaise
- 1 tsp. Chives, chopped
- 1/4 tsp. Garlic Powder
- 1/4 tsp. Fine Sea Salt
- 1 Small Red Onion, sliced (keep rings intact)
- 4 Whole Wheat Burger Buns
- 4 Lettuce Leaves
- Extra Virgin Olive Oil, for grilling
Marinade:
- 2 tsp. Chili Powder
- 1 tsp. Brown Sugar
- 1 tsp. Fine Sea Salt
- 1 tsp. Garlic Powder
- 1 tsp. Onion Powder
- 1 tsp. Smoked Paprika
- 1/2 tsp. Ground Black Pepper
- 1/3 C. Extra Virgin Olive Oil
Instructions
- In a small bowl, mix all marinade ingredients together.
- Preheat grill to high heat.
- Place mushrooms on baking sheet and drizzle marinade over top.
- Gently coat all sides with marinate and let sit for 15 minutes.
- In a small bowl, stir together mayonnaise, chives, garlic powder and salt. Refrigerate until ready to serve.
- Brush the grill with olive oil. Place mushrooms and onions on grill and cook for 7 minutes on each side until both are tender.
- To serve, spread each bun with garlic mayo, top with lettuce, onions, mushrooms, and cover with top bun.
