Herb Crusted Salmon With Garden Veggies
Ingredients
- 1 Fillet Superior Fresh Atlantic Salmon
- Assorted Garden Veggies (green beans, red onions, summer squash, zucchini, and cherry tomatoes)
Herb Mixture
- 6 Cloves Garlic, chopped
- Parsley, chopped
- Thyme, chopped
- Oregano, chopped
- Basil, chopped
- Rosemary, chopped
- Olive oil
- Salt & Pepper, to taste
Instructions
- Preheat oven to 400 degrees.
- Make herb mixture by combining all chopped herbs and lightly coating with olive oil. Mix together by hand and season with salt and pepper.
- Assemble salmon and veggies on baking sheet.
- Top salmon with herb mixture and lightly toss vegetables with olive oil, salt, and pepper.
- Bake for approximately 15-20 minutes, until salmon starts to flake and reads 145ºF on a meat thermometer.
