Ingredients
- 2 C. Cold Pulled Rotisserie Chicken
- 12 Oz. Spaghetti, cooked to Al Dente, drain but do not rinse
Parmesan Sauce
- 4 Tbsp. Butter
- 1/2 Yellow Onion, diced
- 4 Garlic Cloves, minced
- 1 Can Chopped Tomatoes and Chilies, drained
- 1 Tbsp. Flour
- 1 C. Heavy Cream
- 1 C. Chicken Broth
- 1/2 C. Parmesan Cheese, shredded
- 1 tsp. Italian Seasoning
- 1/2 tsp. Salt & Pepper, to taste
- 1/4 tsp. Crushed Red Pepper Flakes
- Parsley, for garnish
Instructions
- Add butter, diced yellow onion and minced garlic cloves to a skillet. Cook on medium high until onions and garlic are translucent, about 2 minutes.
- Add chopped tomatoes and chilies and flour to skillet, whisk to combine.
- Add heavy cream, chicken broth, Italian seasoning, salt, pepper, and red pepper flakes. Bring mixture to a simmer.
- Add 1/2 C. shredded Parmesan cheese. Mix until well combined.
- Add cooked pasta and chicken to skillet, mix well and continue cooking on low heat for 5-8 minutes or until warmed through.
- Serve with extra Parmesan Cheese and garnish with parsley.
