Ingredients
- 2 Slices Whole Wheat Bread
- 2 Slices Dietz & Watson Turkey Breast
- 2 Slice Provolone Cheese
- 2 tsp. Olive Oil Mayo
- 1 Cucumber, cut into thin sticks
- 2 Tbsp. Matchstick Carrots
- 2 Tbsp. SunButter
- 2 Tbsp. Greek Yogurt
- 1 Apple, cut into rings
- 1 Hardboiled Egg
Instructions
Sandwich Sushi Rolls
- Trim the crust off both slices of bread.
- Using a rolling pin or cup, flatten out each slice of bread into a rectangle shape.
- Spread an even layer of mayo on one side of each piece of bread. Follow with evenly layering 1 slice of turkey and 1 slice of cheese on each piece of bread.
- Place cucumbers and carrots at the bottom of each bread slice.
- Starting at the short end of the slice of bread, tightly roll bread up. Make sure bread is sealed, use extra mayo if necessary.
- Use a knife to cut each roll into coins.
SunButter Dip
- In a small bowl, combine SunButter and Greek yogurt
Lunch Box Assembly
- Assemble lunch box by placing sandwich sushi rolls and apples in one compartment. Place the dip in a separate compartment and place the hard-boiled egg in a separate compartment.
- Note: If you don't have bento boxes, use whatever you have on hand! Reusable or plastic containers and baggies work perfectly.
