Polar Bear Muffins
Ingredients
Muffins
- 1 1/2 C. Old Fashioned Oats, uncooked
- 1 1/4 C. All-Purpose Flour
- 1 tsp. Baking Powder
- 3/4 tsp. Baking Soda
- 3/4 tsp. Ground Cinnamon
- 1 C. Unsweetened Applesauce
- 1/2 C. Kemps Skim Milk
- 1/2 C. Brown Sugar, firmly packed
- 3 Tbsp. Olive Oil
- 1 Egg White
- Olive Oil Cooking Spray
Whipped Cream Frosting
- 1 C. Kemps Heavy Cream
- 2 Tbsp. Sugar
- 1/2 tsp. Vanilla
For Decorating
- 25-30 Mini Marshmallows
- 1 C. Unsweetened Coconut Flakes
- Black Decorating Gel
Instructions
Muffins
- Preheat the oven to 400F.
- Prepare a muffin tin by spraying with a non-stick spray.
- Combine oats, flour, baking powder, baking soda, and cinnamon in a large bowl; mix well.
- In a medium bowl, combine applesauce, milk, sugar, olive oil, and egg white; blend well.
- Wash hands after handling raw egg.
- Add the wet ingredients to the dry ingredients and stir until the dry ingredients are just moistened. Be careful not to over-mix.
- Fill muffin cups almost full and bake 20-22 minutes, until golden brown.
- Allow to cool completely while you make the whipped cream.
Whipped Cream Frosting
- In a large bowl, combine the heavy cream, sugar, and vanilla.
- Use an electric mixer to mix until the bowl’s contents thicken into whipped cream. This will take a few minutes.
To Decorate
- Use clean scissors to cut mini marshmallows in half for the bear ears and nose.
- Use a butter knife to spread the whipped cream onto the muffins.
- Spread the coconut flakes in a thick layer on a plate. Flip the muffin upside down to press coconut flakes into the whipped cream.
- Place mini marshmallows for the bear’s ears and nose.
- Use black decorating gel to carefully put eyes and a black nose on your polar bear.
- Repeat until you have all muffins decorated.
Notes
If not eaten right away, you must store your Polar Bear Muffins in the refrigerator. The whipped cream will not remain food safe for more than 2 hours on the counter.
