Ingredients
For Base
- 3 Slices Whole Grain Bread, toasted
- 3/4 C. Low Fat Cottage Cheese
Strawberry and Pine Nut Toast Toppings
- 2-3 Slices Fresh Strawberries
- 2 tsp. Pine Nuts
Avocado Toast Toppings
- 1/4 Avocado, sliced
- 1 tsp. Chia Seeds
- 1 tsp. Sesame Seeds
Smoked Salmon Toast Toppings
- 2 Oz. Smoked Salmon, thinly sliced
- 1 Large Leaf Romaine Lettuce
- 1 Slice Onion, separated into rings
Instructions
- Place cottage cheese in a blender or food processor and blend for 30 seconds. Stop, scrape the sides with a rubber spatula and blend for an additional 30 seconds or until cottage cheese has a smooth, fluffy texture.
- Spread 1/4 cup blended cottage on each slice of toast.
- Top one slice of toast with strawberry and pine nut toast toppings, one slice of toast with avocado toast toppings, and the final slice of toast with smoked salmon toast toppings.
