White Turkey Chili

Ingredients
- 1 lb Lean Ground Turkey
- 1 Small Onion, finely chopped
- 3 Tbsp Olive Oil
- 4 Garlic Cloves, minced
- 2 tsp. Ground Cumin
- 1 Tbsp. Oregano
- 1/4 tsp. Ground Cayenne Pepper
- 8 oz Salsa Verde
- 32 oz Low Sodium Chicken or Vegetable Broth
- 2 - 15 oz Cans No Salt Added Cannellini Beans, drained and rinsed
- 1 - 15 oz Can No Salt Added Pinto Beans, drained and rinsed
- Monterey Jack Shredded Cheese, garnish
- Fresh Lime, as garnish
- Green Onions, chopped, as garnish
Instructions
- Heat olive oil, chopped onion and minced garlic in a large sauce pan or Dutch Oven. Cook over medium heat until onion softens and garlic is fragrant, then add ground turkey. Brown turkey and cook until it reaches an internal temperature of 165 degrees F. Season ground turkey with cumin, oregano, and ground cayenne pepper. Mix until evenly seasoned.
- Add in salsa verde, broth, and beans. Bring to a boil, then reduce the heat and let simmer for 15-20 minutes, stirring occasionally. Garnish with cheese, lime juice and green onions just before serving.
